In this natural setting, Antonio Troya Guardado began in 1940 to produce virgin olive oil,in an oil mill, with the traditional cold pressing system. Year after year and generation the Troya-Cantalejo family, maintains alive the artesanal tradition of oil making in the whole process of extraction. Since then, all these years of experience, love of work and the land have served to maintain the quality of COLD PRESSED virgin olive oil. |

| Another activity which we have developed since 1970 is the curing of Iberian Hams and Front Legs in a curing house below the Arabic Castle. The curing process thanks to the geographic location of the town of Olvera, in the middle of Cadiz Mountains and its ideal microclimate, is totally natural. These Hams and front legs come from our own iberian pigs kept on our estate and fed on totally natural feed. |

We have always made a great effort to bring these natural, healthy and artesan made products to your table. The olive oil is bottled in our own olive press and sold direct under two trade names:
